How to Make Cilantro Kimchi
Calling all cilantro lovers! How to Make Tangy Cilantro Kimchi in 5 Minutes

If you're a fan of cilantro, you're sure to fall in love with this today Cilantro Kimchi (Quick-Pickled Cilantro)I'm going to try making [...].
Not only is it really fragrant, refreshing, and delicious, but it’s also super simple to make—just chop it up a bit, toss it in the seasoning, and you’re done.
It’s a magical side dish that completely cuts through the richness when served with pork belly or bossam.
So, shall we try making it together? 😋
1. Preparing Cilantro
First, I'll wash 100g of cilantro thoroughly.
Cut off the roots, then rinse them under running water 2–3 times to thoroughly remove any dirt or impurities.
After washing, shake off the excess water thoroughly.
If there's too much moisture, the seasoning won't stick and the dish will taste bland.
Next, cut it into 4–5 cm pieces so it’s easy to eat.
What if the cilantro flavor is too strong? If you soak them in cold water for about 10 minutes and then drain them, the aroma will be much milder!
2. Slicing the onion (Optional)
If you want to add a crunchy texture, thinly slice 1/2 an onion lengthwise.
The subtle sweetness of the onion makes it much more enjoyable to eat. Cilantro alone is enough, so you can leave it out if you like.
3. Making the Seasoning Sauce
Now for the key to the flavor: the sauce.
In a bowl, combine 1 tablespoon of red pepper flakes, 1 tablespoon of anchovy sauce, 1 tablespoon of vinegar, 1/2 tablespoon of sugar, and 1/2 tablespoon of minced garlic, and mix well.
Try it as is, and if you want a bit more tartness, feel free to add a little more vinegar.
The more sour it is, the more it really whets your appetite!
4. Gently mix
Now it's time to add the chopped cilantro and onion to the seasoning sauce and toss them together.
Here Key Point! Cilantro has delicate leaves, so if you knead it too hard, it wilts right away..
So, with your hands Gently, Gently toss the ingredients just enough so that the seasoning is evenly distributed.
5. Sprinkle with whole sesame seeds to finish!
Finally, sprinkle 1 teaspoon of whole sesame seeds over the top, and it's done.
It’s fragrant and delicious right away, but if you let it sit in the fridge for about 10 minutes, the flavors will meld slightly, giving it an even richer taste. 🙌
